We welcome 2024 with Creamy Vegetable Stew!!

I must admit that I have been sick the last few days of 2023 and into 2024...

I got an illness and glad I made this stew right before the new year and did not post about it until now to save it for the first post of the new year.

This stew is so worth it and I have truly enjoyed making this and creating it as our own.

The title of the recipe is called: Creamy Vegan Vegetable Stew with Sundried Tomato Broth

I enjoy taking my time to prepare all the ingredients and chopping and slicing everything up beforehand so when the time comes it is easy to add and cook.

This recipe is another staple for us and one that definitely can last a few days.

Don't be discouraged if the stew isn't as thick as you like... just add in cornstarch and water mixture until it becomes as thick as you desire. :)

We use various vegetables and mix it up from what we have available to what we are craving as well. Feel free to not go by the book.
