Veggie Pottage with Chickpeas and Potatoes in an Instant Pot

February 19th, I made my fiance, Traven his meal for the week due to it being his birthday week for him. I made mongolian beef (see a previous post about that meal) for him, but I wanted something else.

I am always digging for something new to try and fine-tune for ourselves.

I wanted something somewhat familiar that I have made, but yet different.

Each week I make hummus for my breakfast or as a snack if needed.



I truly enjoy chickpeas, so I'm not surprised that I enjoyed making this recipe as much as eating it.

I enjoy being in the kitchen and preparing all the ingredients first with chopping and measuring to make sure I have the recipe as accurate as I can the first time I make it. After I make something the first time I usually end up finding ways to make it our own in any small way that we can from changing up spices to adding different vegetables depending what the recipe originally calls for.


The longest and most daunting part was cooking the chickpeas. Unless I'm making "tuna" salad or something of the sort, I boil my chickpeas in water with 1 teaspoon of cumin. Afterwards I take the time to take of the shell so I have a softer chickpea that just melts in your mouth along with all the other ingredients, especially with this recipe.


Once the chickpeas are prepared and all is ready to go, it's time to cook and saute the onions and garlic and the instant pot is deglazed... it's time to add everything bit by bit as the recipe explains. Once all is added in and mixed up, start the instant pot and walk away.

Waiting for the natural release process to be complete was the next longest wait for I was ready to try the recipe. When that was completed it was ready and it's exactly what my palette was asking for without me being sure of it.
