Simple veggies and rice on Naan bread

Mid-March I was searching for different ideas that would be on the quick side and yet simple.

I am a huge fan of cauliflower, bell peppers (enjoy all of them), and onions.


I enjoy making basmati rice as well.


I decided to throw together some rice and the vegetables together on some toasted naan bread with a slice of cheese for a yummy sandwich.


For a few days I did all this without the naan bread and cheese.


When it comes to the vegetable I either use grapeseed oil or have been experimenting with not using oils and using vegetable broth to be lighter. To me it does not make a huge difference in taste.

I like to make a mixture I have discovered from a previous recipe of: paprika, chili powder, onion powder (yes I will still add a bit though I have onions), garlic powder, cumin and pepper. There will be times I will add red pepper flakes for a bit of a hint of more spice depending on my mood.

Mix these all together and then with the vegetables and put in the oven at 400 degrees for about 20 minutes, with mixing up half way through. Bake until desired.


This may not be much, but with my go to vegetables, it is a good meal for a few days.
