Roasted Cauliflower with Creamy Garlic Parmesan Pasta

After making the previous recipe, I did not want the cajun with the cauliflower, but will admit I was on a cauliflower kick. I just couldn't get enough of it, plus I bought extra cauliflower and didn't want to waste it.


On January 31st, I found my next recipe!


This recipe was discovered at my first website that we have used once we truly started living a plant-based life:


This recipe is just as it sounds... CREAMY!!!

I will admit that when I first made it I did not do the math... I used 26 OUNCES of coconut milk.

If you want it EXTRA creamy go for it...

If not, then go with what they have advised which is 16 ounces of coconut milk. I have used 13 ounces of coconut milk and it still turns out wonderful.


This recipe is so creamy and as you can more than likely tell from the picture, I love me some parsley too! Since making this recipe we have repeated it several times for the past 3 weeks and I do not regret it.
