Pancakes for Breakfast

I will admit that these past few weeks I have not posted due to not making a lot of new recipes. We remade eggplant parmigiana and I had perfected it by using granulated parmesan cheese instead of the shredded parmesan cheese that I used the first time.


Besides that we were busy and a bit lazy as well and did not truly prep and make meals, especially new ones that were not worth posting about.


Then we got back into the kitchen!!!


We found pancake mix that was not only yummy, but plant-based and fits our lifestyle!


We discovered and used this pancake mix from fresh market. We also found a good pancake mix at sprouts a few weeks prior and I did not originally think it was worth posting about.


It quite easy to make and I enjoyed waking up and making us breakfast. These pancakes are quite filling as well!


We have discovered and enjoy using egg replacer.

I will admit that by using egg replacer instead of eggs does at times throw off recipes, but it is well worth it due to eggs tend to mess with our stomachs.


Sometimes it is okay to use packaged things as part of the recipe every once in a while. :)
