Nothing like homemade mashed potatoes

Since back on October 13th and we adventured with shepherd's pie, I was on a 3 week kick of making homemade mashed potatoes or homemade mashed sweet potatoes!

We enjoyed mashed potatoes with almost every meal or even ate them alone for a snack.


I enjoyed the process of peeling, boiling to softness, mashing the potatoes down and adding our oatmilk, butter and salt and pepper for taste until we reached perfection.







There is nothing like making your own gravy as well... just melt some butter, add flour to make a roux and slowly add left over vegetable stock from what you used to boil the potatoes and make them soft or use fresh vegetable stock until you get the thickness you like of gravy.


At times I had to add more flour incase it became too watery.


Don't forget to add salt and pepper to taste too!



If you're feeling it... sometimes you just have to ADD CHEESE!


Here in the picture I added our 4 blend Mexican cheese, but feel free to add whichever cheese you prefer or craving.
