Chickpea and Squash Curry

On November 21st, I made my first curry.
My love enjoys Indian food, I on the other hand must admit that I am not a fan of the spiciness that can be in Indian food.
We looked and we found a great recipe to try on youtube.com from Grubanny.
He is an alkaline vegan and has some amazing recipes that I cannot wait to adventure and experience myself.
I stayed up late after work and experimented and made what you see to the left. I made the chickpea curry with butternut squash as well as with chayote.
We just a few days before bought a hand mixer and I put that to use and it worked out wonderfully.
The curry turned out pretty good and will definitely be perfected next time with a few adjustments with more chickpeas and adjusting some spices.
It did turn out edible and my fiance did enjoy it.
He did enjoy the rice as well and even enjoyed the meal so much he ate the curry by itself.
As I have previously said... you never know until you try. I did a pretty decent job with this recipe and know next time it will be perfected and taste even better.
