Chicken and Ground Beef Quesadilla

When you want a quesadilla, but not sure if you want chicken or ground beef... why not combine both!?


That is exactly what we did for this quesadilla. We have made this recipe originally with tofu... I'll be honest this was the first time I learned how to properly press and cube tofu. When we very first made this recipe it was before we learned about tofu and soy products and how soy is not good for men in many ways... I will let you do your own research and not go on my own soap box here.


We have made this very quesadilla recipe with chicken alone, ground beef alone, sausage alone and now combined ground beef and chicken. This combination is one worth trying and adventuring!!!


On October 10th we made the combination as you can see below:




Above you can see the process of making the yummy meat with the pinto and black beans, onions red bell pepper and the different seasonings plus more. We topped it with dairy free mozzarella cheese. Sometimes we use dairy free Mexican cheese, it all depends on our mood and what we are craving. I will also add here that this tastes yummy with Kinder brand BBQ sauce of your choice... I usually go for the hickory brown sugar, mild or even the bourbon peach BBQ while my fiancé loves the hot sauce, to each your own preference.

This will also always be another go-to recipe. Just cut it up with a pizza cutter or knife and enjoy! Try it out and perfect it for yourself like we have. You never know until you try.
